LAGERS:

The lager family encompasses a variety of different styles which all share the common characteristic of being fermented cool and stored, or “lagered,” at cold temperatures for an extended period of time. Hence lagers are “bottom fermented” beers. Vienna style is the classic amber to red lager which was originally brewed in Austria in the 19th century. They have a very malty toasted character and a hint of sweetness. Pale lagers are the standard international beer style and are the generic spin-off of the pilsner style. They are light to medium-bodied with a light hop and crisp, clean malt character.

PILSNERS:

Pilsner styles originate from Bohemia in the Czech Republic and date back to 1842 in the Czech town of Plzeň when the city fathers decided to brew a pale beer, then a new idea in the lager world. They are medium to medium-full bodied and are characterized by high carbonation and tangy Czech varieties of hops that impart floral aromas and a crisp, bitter finish.

BOCKS:

Bocks are a specific type of strong lager historically associated with Germany. These beers range in color from pale to deep amber, and feature a discernible sweetness on the palate. Bock styles are an exposition of malty sweetness classically associated with the character and flavor of Bavarian malt. Hop aromas are generally low though hop bitterness can serve as a balancing factor against the malt sweetness.

PALE ALES:

Pale ales tend to be full-bodied with an assertive character on the palate. Despite the name, pale ales are not pale but more of an amber hue. The original designation was in reference to this style of beer being paler than the brown and black beers which were more popular at the time of the style’s inception. The varieties of Pale Ales are endless. The most common are the hops in your face American varieties or the maltier English types.

INDIA PALE ALES:

IPA’s are deep gold to amber in color, and are usually characterized by floral hop aromas and distinctive hop bitterness on the finish. India pale ales were originally brewed by British brewers in the 19th century, when British troops and colonizers in India depended on supplies of beer shipped from England. Standard ales did not survive the journey; hence brewers developed high gravity, highly hopped ales that survived shipments in casks.

STRONG ALES:

Not a style, per se, but the only logical category to incorporate the plethora of strong, stylistically vague beers coming from American brewery’s. Some are related to English Strong Ales or “old ales” but with more hop, while others are ultra-strong variants on the IPA or red ale themes. But no matter how varied their origins or characters might be, all are intense, potent, with generous quantities of hops and malt.

Scottish ales are typically full-bodied and malty, with some of the classic examples being dark brown or nearly black in color. The term “Scotch ale” is used to identify a very strong, malt-accented specialty from Scotland.

PORTERS:

Porters are very dark reddish-brown to black in color which comes from roasted, unmalted barley. They are medium-full bodied, and characterized by a flavor profile that can range from vary subtle dark malts to fully roasted, smokey flavors. First brewed in London in 1722 by Ralph Hardwood of the Shoreditch Brewery, this beer was intended as a substitute for a then popular mix of ale, beer, and two penny beer (derived from is cost of two pence per quart). The beer was called “Entire” and was marketed as being “richer and more nourishing than ale”. It was intended for porters and heavy laborers to help provide them with the strength needed to accomplish their tasks.

STOUTS:

Stouts are very dark, almost black, heavy, beers, and feature a heavily roasted flavor profile. This is achieved by brewing with malt that has been kilned until it resembles burnt toast. Stouts have several different variations: first is a dry stout which tends to be rich and dark with a definitive bitter note and drying palate feel. Second is imperial stout which is an extra strong version originally brewed by the British, tailored to the tastes of the Russian Imperial Court. Roasted cocoa and dried fruit flavors are typical. Third is the oatmeal stout which has small proportions of oats used in place of roasted malt.

TRAPPIST, ABBEY AND BELGIAN-STYLES:

Trappist ales only come from seven Abbeys of the Trappist order that still brew beer on their premises. Although the styles may differ widely between them, they all share a common trait of being strong, bottle conditioned, complex and fully flavored. Monastic or abbey ales are an ancient tradition in Belgium. Currently, very few working monasteries brew beer within the order, but many have licensed the production of beers bearing their abbey name to large commercial brewers. These abbey ales can vary enormously in character.

WHEATS:

Brewing with wheat in addition to barley is an ancient tradition that stretches back to the earliest days of brewing. In German, Hefe means “yeast” and Weizen means “wheat”. There are several different styles of wheat beers. First are Hefeweizen that originate from southern Germany, particularly Bavaria, and are brewed with at least 50% wheat in the mash. Hefeweizen are refreshing, highly carbonated beers that undergo secondary fermentation, often in the bottle, and they yeast strains used for this purpose impart a spicy, clove-like flavor. Second are white or wit beers inspired by German weizen tradition, but are of distinct Belgian customs using flavored wheat. Third are Kristall weizen which describe filtered, therefore clear hefeweizen. Last but certainly not least is the Dunkel Weiss which derive their character from the use of darker malts, granting darker color and fuller malty flavors.

LAMBICS:

Lambics are wheat beers made with stale hops and have a strong acidic character from the spontaneous open-air fermentation with wild yeasts and other microorganisms. Traditionally only produced in the Bruxelloise region of Belgium, on the Senne Valley in and around Brussels.

FLEMISH SOURS:

Oud Bruins, not restricted to, but concentrated in Flanders, are light to medium-bodied and deep copper to brown in color. They are extremely varied, characterized by a slight lactic sourness and spiciness to smooth and sweet.
Also known as Flanders Red Ales they are infamous for their distinct, sharp, fruity, sour and tart flavors which are created by special yeast strains.
